Seared Scallops And Beans

This recipe is delicious and goes well with garlic bread. Enjoy!

Preparation time: 10 minutes

Cooking time: 15 minutes

Servings: 4

Ingredients:

2 tbsp olive oil, divided

1½ lbs. sea scallops

¼ teaspoon salt

1 cup pre-chopped onion

1/8 tsp crushed red pepper

2 garlic cloves, minced

¼ cup dry white wine

1 cup reduced-fat, low-sodium chicken broth

19 oz. (1 can) cannellini beans, rinsed and drained (or other white beans)

6 oz. (1 package) fresh baby spinach

2 tbsp chopped fresh basil

Directions:

1. Pour 1 tbsp oil into a large nonstick skillet and heat over medium-high heat. Sprinkle salt evenly over scallops, and then place the scallops in the pan. Cook each side for 2 minutes or until properly cooked. Remove scallops and keep warm.

2. Pour the remaining 1 tbsp oil into the pan; add onion and sauté for 2 minutes.

3. Add garlic and pepper, and then cook for 20 seconds, stirring often. Stir in the wine and cook for 1 minute or until most of the liquid disappears or evaporates.

4. Stir in the beans and broth, and cook for 2 minutes. Add the spinach and cook for 1 minute or until it wilts. Remove pan from heat and stir in basil.

Cooking tips: Prepare delicious grilled garlic bread for dipping. Heat up a grill pan over medium heat. Oil 1 tbsp of olive oil evenly over 4 slices of French bread about 1 ounce. Place the bread in the pan and cook each side for 2 minutes or until its lightly browned. Rub each side of the bread with cut sides of a halved garlic clove.
